Vegan Blueberry Pancakes

Start your day right with these delicious vegan pancakes. They are pretty easy to make and have ingredients such as oat bran and Reboost’s very own Fibre Mix



1/2 cup almond flour
1/2 cup oat bran
1 tbsp Fibre Mix
1 ripped banana
1 tsp baking powder
240ml non-dairy milk (i.e. soya milk)
1 tbsp apple cider vinegar or lemon juice
1 tsp vanilla extract
1/2 cup blueberries, extra for topping
5-6 strawberries
2 tbsp chocolate hazelnut spread
maple syrup (optional)

1. In a measuring jug, add one banana, mash it with a fork. Then add soya milk, apple cider vinegar, and vanilla extract, stir to combine. Set aside.
2. In a medium bowl, add almond flour, oat bran, baking powder and Fibre Mix, mix well.
3. Pour the liquid mixture into the dry mixture and whisk until smooth. Let batter rest for 5 minutes. Then gently mix blueberries into the mixture.
4. Pour about 2 tbsp of batter onto a non-stick pan or griddle over medium-low heat.*
5. When the top begins to bubble, flip the pancake and cook until golden.
6. Spread chocolate hazelnut spread over the pancakes and top with fresh strawberries and blueberries. Then drizzle with maple syrup if desire. Enjoy!
